Energy for the Weary Mom {a recipe for easy energy bars!}

I don't know about you weary mom, but I often find my sad tail dragging sometime between 10 AM and well, OK, pretty much all day long. I'm doing normal things like drinking more water, going to bed earlier, drinking more coffee (ahem), and generally trying to eat healthier than I usually do. But it helps to have a tasty pick-me-up sitting in my refrigerator too. I recently discovered these yummy energy bars, and knew I had to share them with you!

(Special thanks to my friend Erin for the recipe. Erin got it from another friend, who got it off the internet somewhere but can't remember where. If anyone knows where it originated, please let me know and I'll be happy to give credit where credit is due!)

These easy energy bars are loaded with good stuff...stuff I've always wanted to eat but thought I couldn't stomach until now. And they taste a little like gooey heaven. You'll  love them...promise!

Easy Energy Bars for the Weary Mom

1 cup quick oats

½ cup peanut butter

1/3 cup honey (use local if you can find it - I hear it's good for seasonal allergies)

1 cup coconut flakes

½ cup ground flaxseed

½ cup mini chocolate chips

1 tsp vanilla

·         Combine all ingredients.

·         Chill in fridge for at least 2 hours

·         Roll into balls.

·         Store in an airtight container in the fridge for up to 1 week.

That's seriously it!

I kind of like to press mine flat into a dish, chill for a few hours, and then cut into squares, but I've rolled them into balls too. Either way, they're delicious and my whole family (even my husband, who isn't crazy about coconut flakes) loves them! I think it's the chocolate (wink, wink).
